Sea Bass “Cartoccio”

For 4 people:
2 fillets of “Natural Sea Bass”, 1 leek, cherry tomatoes, Taggiasca olives, salt, pepper, extra virgin olive oil, 1 Cantabrian anchovy.
Cut the leek into slices, removing the greenest part. Brown it in a pan with a drizzle of oil and the anchovy fillet. Add the chopped tomatoes and the olives, season with salt and pepper and leave to flavour for a few minutes.
Make 4 squares with a side of about 30 cm from the baking paper or use special cartoccio bags. Arrange a small pile of the leek mixture in the center. Place half a fillet of "natural sea bass", and close the foil, tying it with kitchen twine.
Place the foil in the oven at 200 ° C for 5-8 minutes.
